Summer Picnic Foods Desserts

Here is part 2. What you really want. Dessert! Cookies and ice cream recipes to delight your family and your friends (if you decide to share)
Cookies
Thumbprint Cookies (GAPS, LOD) These are quick and easy to make and my family really loves them. They are good along side some ice cream too. Not too sweet but sweet enough. I brought them to a family picnic last summer myself.
Date and Nut Bars (GAPS, LOD) Bar cookies are great for how quick and easy they are to make. There are no exception. Quick to make and tasty to eat.
Chocolate Coconut Fudge Bites by GAPS Diet Journey (GAPS) Chocolaty but not melty. These look rich and delicious and perfect to share at a picnic or to pack secretly for your own enjoyment.
Chocolate Chip Coconut Macadamia Cookies by Whole New Mom (GAPS if you use homemade chocolate chips or leave those out. LOD if you leave out the chocolate chips and don’t eat very many). Macadamia nuts are lower oxalate than most so you can get away with a couple of these on the LOD. These look like a tasty version of chocolate chip cookies that are small enough that I would be willing to share them with others.
Ice Cream and Popsicles
All of these ice cream recipes are for smaller ice cream makers. If you are wanting to make ice cream to feed a crowd in a big hand cranked style ice cream maker you will need to double these recipes. What my family does is we make ice cream at home for us and bring it for our own enjoyment while others eat their own ice cream. French Vanilla Coconut Milk Ice Cream (GAPS, LOD) Homemade coconut milk makes this taste very fresh and delicious.
Strawberry Lemonade Popsicles (GAPS, LOD) Cold and refreshing. My mouth is watering just looking at the picture of these. The bright colors and tangy sweet flavor of these will delight young and old alike.
Raw Peach Ice Cream (GAPS, LOD) Fermented raw cream and raw peaches make this a tangy sweet summer delight.
Chocolate Almond Chip Coconut Milk Ice Cream by Whole New Mom (GAPS- use honey and leave out the arrowroot). Dairy free chocolate ice cream with almonds and chocolate chips.
Mint Chocolate Chip Ice Cream -Dairy Free By Whole New Mom (GAPS if you make your own chocolate chips and use honey, LOD if you leave out the chocolate chips). This looks very minty and I like the idea to use parsley to give it a green color.
Dairy Free Vanilla Ice Cream by Delicious Obsessions (GAPS-Use honey instead of sugar and stevia, LOD) Another dairy free vanilla ice cream recipe made with coconut milk.
Vanilla (and chocolate) Kefir Ice Cream by Delicious Obsessions (GAPS- Use honey, LOD-only vanilla version) Probiotics is the form of a sweet dessert! What more could you ask for?
Mint Chocolate Chip Ice Cream by Delicious Obsessions (GAPS-use homemade chocolate chips, honey to sweeten, make dairy free or kefir version, LOD- Skip chocolate chips)
