Brussels Sprouts with Bacon
Ok this dish is so simple that I feel guilty writing a recipe for it but I know I need some inspiration sometimes so I’ll go ahead and do it. Thanks to the Leptin Reset and the fact that my eldest will only eat a big breakfast if it includes bacon we have a lot of bacon grease saved that we work into other meals (this is not a hardship, just a fact). This recipe will work if you don’t have bacon grease and will probably even work without bacon (but why?) We use Beelers bacon here. It is thick cut and low sugar. Organic Prairie makes one that is strictly GAPS legal but it is very thin cut. I would use twice as much for this recipe. Also US Wellness sells a GAPS legal bacon (Go here to shop.).* This was the first time my 8 year old ate more than one brussels sprout at a meal and she ate it willingly. In fact she had 3 servings “Heavy on the bacon”.
- 2 bags of fresh brussel sprouts trimmed and cut in half
- 1/4 cup bacon grease or other solid fat
- 1 cup chicken broth
- 3 slices of thick cut bacon cut into small pieces (1/2-1 inch)

*US Wellness Bacon.-You will have to read the ingredients list since not all of theirs are GAPS legal. The ones with brown sugar and xylitol are not allowed on GAPS. They do sell an unsweetened beef bacon and unsweetened or honey sweetened pork bacon.

This is my kids' FAVORITE way to eat brussel sprouts! They like them steamed and sauteed too… but with bacon is the FAV!

Ahh, we miss bacon. I did see some Organic Prairie bacon at the store last week but it was $13 a pound. I just have a hard time paying that much. So for now we are living a bacon-less life.
I do love Brussels sprouts even without bacon, though. I have only ever sauteed/boiled them but I think I need to try roasting sometime.
Why, oh why, have I not thought to roast brussel sprouts with BACON. DUH. Everything's better with bacon. Will definitely try this! =)
Yes you should. Roasting really brings out a great flavor in them. The US Wellness meats bacon is a bit cheaper than that. The price depends a bit on what one you get.
Surely your youngest will love bacon Brussel sprouts!
