Stewed Rabbit with Fennel and Zucchini Noodles
We are lucky to be able to get rabbit from a local farm that also pasture raises our chickens and fall turkeys. If you haven’t had rabbit is is very good. Similar to chicken, but much dryer since it doesn’t have the skin or much fat on it. I can get them whole from this farm and pieced from another farm. If you get your rabbit whole and want to cut it up this video shows you how. I usually stop at the point where he has cut the ribs from the body but you can cut it up as much as you want. I also don’t soak it in salt water. I haven’t run the oxalate numbers on this but it should be pretty low because of how little I used of the higher oxalate foods like tomato paste. Plus this ended up very much like a stew. It would serve 6 people I think, depending on the size of your rabbit.

Anything i need to know before i buy a spiralizer? Brand? Price? Those zucchini noodles look perfect. If i could get nito to eat something besides meat my life would be easier.
