Salmon with Arugula

Preheat oven to 400. In a 9×13 pan scatter sliced mushrooms. Cut up the butter into pieces and add about half of the butter with the mushrooms scattered in the bottom of the pan. Fill the pan with the arugula. On top of the arugula place the salmon filets, skin side up. Put the remaining butter pieces around the fish on the arugula. Sprinkle with salt. Place in the oven for about 20 min. This is done when the arugula is fully wilted in the pan. Remove from the oven and serve right away.In my family this served 4 but if you don’t each eat 1/2 a lb of salmon per meal it could serve more.

I have two big salmon in the freezer my husband caught in the fall. I haven't used them because it would take forever to pick out the bones. However, that salmon you have in the pic looks exactly like my locally caught, humongous salmon in the freezer and out simply it's making me hungry. Maybe tomorrow…
How wonderful to have that salmon to look forward to! We love salmon (well all but the littlest and she used to love it so I suspect she will again some day).
Oh my goodness, Patty! I threw this together last night because I needed something simple and easy… and because of how easy it was I didn't really expect that much out of it, but it was AMAZING!!!! Every bite was gone and everyone raved! Art has even upped this meal to his new favorite salmon dish (and he loves salmon… so that's saying a lot!)

So glad everyone loved it! Salmon is on sale tomorrow at Whole Foods and I plan to stock up. It is our favorite fish and oh so good for you!
