Grain Free Focaccia Bread

Are you looking for a nice hearty grain free bread to go along side a winter soup? This Flax Focaccia really fits the bill. It is well textured and dense. It also stands up nicely to strong flavors. If you choose golden flaxseed for this recipe it will have a lighter color. I used brown seeds. Flax is a very fibrous food and is on the full GAPS diet only.

Flax Focaccia Bread

Preheat oven to 350 degrees.

Line cookie sheet with parchment paper.

Beat eggs, then mix in butter, water and honey and set aside.

Grind flax seeds in aVitamixor an Electric Spice Grinder to make flax meal. If you use a spice grinder/coffee grinder you will need to grind it in batches. Flax meal goes rancid quickly so if you are going to purchase it ground or grind it ahead of time be sure to store it in the freezer.

Mix dry ingredients together in a bowl.

Add the egg mixture to the dry ingredients and stir well. I used my Hand Blender to get it all mixed up nicely. It tends to want to be lumpy and you need it very smooth. Let mixture sit for 3 minutes.

Place into prepared pan and shape into a flat circle or oval.

Sprinkle with optional toppings.

Bake for about 20 minutes or till done.

Serve warm with butter or your favorite topping.

  2. I was very surprised by the texture of this, a nice soft crumb, much like real whole wheat bread! I had a few extra egg whites in the fridge, so I used three egg whites and three whole eggs, but otherwise followed the recipe as written. We don’t eat a ton of flax seed, so I won’t use this every day, but it is perfect for accompanying occasional meals. Thank you!

    • Hi,been on GAPS diet now seance January.Was already gluten free.So I skipped intro when to bone broth meats and fruits.Now I am reading that if I do not do intro I and kids wont heal 100% But the intro says no sugar/fruits/honey. Do I really need to back track and start intro?

      • Hi Michelle, Intro is a necessary part of GAPS for many people but not for everyone. It often will speed healing significantly and for that reason alone many are encouraged to not skip it. That said it is not always necessary for healing, and in fact when Dr Campbell-McBride first wrote the GAPS book intro was not a part of it. That was added later when she saw that some of her patients needed this extra piece to see the healing that they were looking for. My family has done intro 3x and we were gluten free and mostly grain free when we started GAPS. Intro has really helped us to pinpoint some issues and find healing. I would encourage you to do intro. You may find that you can get through it in a couple of weeks or it may take you a long time. I have encountered people who expected intro to be “easy” because their diets were so clean or their symptoms seemed minimal and it was not as well as those who expected a long difficult road on intro who were able to progress through it quickly and easily. You really do not know till you do it yourself.
