As many of you know my girls and I were diagnosed with Lyme disease over 3 years ago. So many pieces of our health puzzle fell into place when we got that diagnosis. Unfortunately being diagnosed with Lyme and curing Lyme are not at all the same thing. If we had caught it early, there is a good chance that a fairly short course of antibiotics would have cleared it right up and we would have returned to health. But it was not caught early at all. While we will never know for sure, we are fairly confident that I was infected many years ago and my children were both infected before they were born. Lyme passes through the placenta and can infect babies in utero. They never had a chance. When we were diagnosed we had been on GAPS for about 9 months. Lucky for us a diet like GAPS is ideal for anyone suffering from Lyme so that part of treating our Lyme was already in place. Over the past 3 years we have attacked the Lyme in many different ways with different herbal regimens, homeopathics and nutritional support as well as some Rx medications to support the various body systems that Lyme taxes like our thyroids and adrenals. We are so much better than we were! I have also tacked my dental issues getting my cavitations cleaned out and my mercury amalgam fillings removed. After the cavitation surgery I felt so much better that I had hope that my body would then heal itself! We were all doing really well and improving in our health all the time. As I was putting the capsule back together last night after taking my tiny dose of my new probiotic to minimize die off I was struck by the absurdity of it all. So I decided I would start a top ten list. Much of it gleaned from my own experience but I think that many of you can identify with this too. There might be a little exaggeration in here but then again there might not. *wink* 10. One probiotic capsule is enough for your whole family for a week. 9. You discover your 9 year olds unflushed poop and are glad that you have a chance to see it and evaluate it based on the bristol stool scale. 8. The vendors at the farmers market exclaim over your children’s love of various vegetables and offer them free samples and other goodies. 7. Your 5 year old is horrified that a meal is considered over before a ferment is served. 6. You think nothing of going over the the fridge and grabbing a slab of butter for a snack. 5. You wonder why everything others want to do seems to revolve around eating. You have learned eat first and some trail mix in your purse just in case there aren’t any safe options. 4. How to dehydrate Peppers and other summer foods and preserve the harvest into fall. My family has a lot of food restrictions. Especially my 5 year old. She actually will eat nearly every food that she tolerates unlike many 5 year olds. Unfortunately it is still quite restricted. One of her favorite foods is red pepper. Conventional red pepper is one of the worst foods as far as pesticide residue is concerned and so since it is a larger than average portion of her diet and her health is so fragile, it is important that the peppers that she eats are organic. In the wintertime it can be difficult to find organic red peppers and they are very expensive as well. Last summer we got a lot of peppers in our CSA boxes. More than she could eat in a week when the season was in full swing. The rest of us like to save those peppers for her since they are such a treat and since she is so limited in her other choices so I began to cut them up and dehydrate them. She loved the dehydrated peppers! I only managed to get about 2 qt jars filled with them last year and even being careful to only use the dehydrated peppers when I couldn’t find fresh ones her supply quickly disappeared. This year I decided to do something different. I requested a half bushel box of colored peppers from our CSA to get all at once so that I could then make her a lot of dehydrated peppers for the coming winter. I washed and sliced the peppers into slices that were a generous ¼ inch thick. I did this either as rounds or as long slices. The peppers shrink quite a bit so I wanted them substantial enough to be easy to eat as a finger food. But there is a limit to the size they can be and fit on the trays in my dehydrator so finding that sweet spot took a little bit of trial and error I have an excalibur dehydrator (affiliate link) that I use all the time and especially in the summer when we have produce to save for winter. I got done filling the excalibur and still had quite a few peppers remaining! Thankfully they will keep for a week or more in the fridge so I still had some time. 13 years ago I had surgery to treat my endometriosis. The surgery was extensive and I did not recover from it well at all. I was in constant pain, weak and frail. I rarely left my house because I was in so much pain. While I was still unable to work, I went to a massage therapist that my mother saw. My mother told me that this massage therapist had a type of massage that might really help me. I did not know what to expect. At first I was expecting a massage but when she told me to keep my clothes on I wasn’t sure what to think. What I experienced that day was a turning point in my healing from that surgery. I share more of this story in the book Trust Your Intuition (affiliate link). Lets see if I can explain the theory behind CST. All of the nerves in the body are connected. What you may not realize is that they are also all surrounded by a membrane and inside of that membrane is a fluid. We call that fluid cerebral spinal fluid when we talk about it around the brain and spinal column. Many people are aware of this membrane surrounding the brain and spinal column but most do not realize that it actually extends to encase all of the nerves in the body. This fluid moves, it is not static, and it has a regular rhythm to it’s movement. This rhythm is different from the rhythm of the heart or breathing. It is possible to feel this movement if you are tuned into it. It is very subtle but distinct. When you do CST you hold or stop the movement for a time. This allows the fluid to flow into some of the more restricted places and work things out. That is how it has been explained to me. I’m sure that if I were trained to be a CST therapist I would learn a lot more about the theory behind this method, however that has been enough for me. Interestingly the CST therapist that I have started working with was saying that she really doesn’t understand why or even really how it works. It is just that she sees that it works.
